Herbs for Pickling

I am after a herb that can be used in pickling to add flavour to the spices that are on the market today. I.e. pickling spices.

The best known pickling herb is fresh dill, for dill pickles. But many herbs can be used. Try basil, rosemary, thyme, oregano, bay leaf, to start with.

Also vinegar on the market is tending to be salty when making up a salad, can you offer a solution still using vinegar, or any other herbs and spices for pickling please.

A herb to offset or mask the saltiness of vinegar? I can’t think of anything specific that might work, but I am sure that there are herbs that you could try. The books "Herbal Vinegar" by Magie Oster and "Mustards, Ketchups and Vinegars" by Carol Costenbader may have ideas to try. Both books are available from Richters.
