If you are cooking a chicken, what herbs are best to use?

Almost any herb can be used with chicken. I have used tarragon (Chicken Piccata); rosemary (Cherry Chicken with Rosemary and Orange); sage (Herb Roasted Chicken with sage, rosemary, thyme and savory; thyme (Lemon and Thyme Chicken with Mushroom Couscous); cilantro (Chicken Tikka Masala); chives (Cranberry Orange Stuffed Chicken Breast with parsley and rosemary); basil (Pesto Pasta, just add cooked chicken strips), dill (add chicken to a potato salad that is seasoned with fresh dill). Herbes de Provence is also use to roast chicken... it is a dried herb mixture. See www.yvonnetremblay for information on recipes in "Thyme in the Kitchen" and for Herbes de Provence and other herb mixtures.
