Hi! I would like to know how to make tea from thyme and what kind do you use. I didn’t know that where were so many kinds. Where can I buy them in the winter time? If you used just the thyme by itself, wouldn’t that be bitter?

Tea made from thyme leaves is believed to be helpful to dispel an on-coming headache, to relieve chest congestion and coughs, ease menstrual cramps and moodiness, fever and mild sore throats. Sip several cups a day, and if congested, also inhale warm vapours. Honey or sugar helps improve any bitterness. Add a bit of lemon juice if desired.

Pour 1 cup of boiling water over 2 teaspoons dried thyme leaves. (Make sure they are not old -- should have strong fragrance.) If you have fresh leaves available, also add a few sprigs. I especially like to use lemon thyme. Let sit to infuse for 8 to 10 minutes. Pour through strainer and sweeten to taste with honey.
