Chives and Oregano in Hanging Planters

I grew chives and oregano outside in hanging planters. With the weather we have had they are both growing like crazy. My question can I break some off and will they still keep growing? Also if I want to use them later do I dry them or what is the procedure?

What a great idea to grow them in hanging planters, especially the oregano which can take over and spread in a garden! The chives would look great all in flower. (Use the flowers to make a nice pink chive vinegar. Go to Q and A on making vinegars.) Herbs should be continually harvested during the summer. All herbs benefit from pruning during the season which helps stimulate new leaf growth and production of the flavour oils. Pinch off straggly stems and any dried or yellowed leaves. Pinch off flowers or the plant will want to go to seed. Chives grow from the centre outwards, so remove from the outside first. Don’t worry, they will definitely keep growing. Chives freeze well, and drying is my preferred method for oregano. (Go to Q and A on Freezing and Drying.)
