How long does the process of flavour transfer take? Is leaving them in a sunny window okay?

It may take a week or so for the flavour to infuse the oil. Put them in the fridge to keep the oil from going rancid. As soon as they are infused (taste), then strain out and discard the leaves. Store in fridge and use up within about 3 months.
