I would like to try making an infused oil using a recipe that calls for 2 oz. chopped dried cayenne chile pepper. However, I don’t have any. Would I be able to substitute dried chile powder and in what quantity?

You can used dried chile powder but be careful of the quality and purity. Chile powder purchased in the grocery store could be old and have other ingredients and other types of chile peppers added to it. Cayenne peppers are very hot while other chile peppers are not. If the infused oil you are making requires a high heat chile peppers then stick with a cayenne chile pepper.
